Chaffin Family Orchards Cooking Classes

Carol Albrecht, owner of the farm and a 3rd generation Chaffin farming our land, is starting the Chico-Butte Valley Chapter of the Weston A. Price Foundation.   This new local chapter will be sponsoring monthly cooking classes.  These cooking classes will focus on nutrient dense whole foods and nourishing traditional cooking methods.  Carol and long time friend Kim Port will teach these classes on the third Monday of each month, 6:00 PM at the Chico Grange.  Check out this link if you need directions http://www.chicogrange.org/info/public_html/ .
Each month will feature a cooking lesson or a guest speaker.  Some months will also include potluck meals and we will always have tastings.  Our first class was Monday January 18th.  This first lesson covered the making of mineral and gelatin rich bone broths and nutrient dense homemade soups from these broths.  Carol discussed ingredients and demonstrated techniques for making tasty chicken and beef broth.  We learned how to increase the mineral and gelatin content of our stocks as well as get them to taste delicious.   Using, storing, and packaging broths to make quick meals was also covered.  Of course we ended with some yummy samples.
There is no cost for the class as it is sponsored by the newly formed Chico-Butte Valley Chapter of the Weston A. Price Foundation.  The Weston A. Price Foundation (WAPF) supports wise traditions in food, farming, and the healing arts.  Local Chapters of WAPF are set up all over the country to help people find locally grown, sustainable, nutrient dense foods.  They also host cooking classes, seminars, potluck dinners and other activities to help you learn to integrate properly prepared whole foods into your lifestyle.  Their website is available at www.westonaprice.org/ for further information about this nonprofit charity.
It is the hope of our farm that a Weston A. Price Foundation chapter in the Chico Butte Valley area can assist many of you in meeting your health and environmental goals in the coming years.  The group is inviting many other local growers to help people network with the local food providers to further our common goals. In addition we encourage you to bring things you might have to sell/trade such as keifer grains, kombucha scobys, homemade cheeses, garden raised eggs, etc. We look forward to getting to know you better and hope to see you next Monday.
If you aren’t from the Chico region but you are already part of a Weston Price chapter in another area we would love to have you attend to help us kick off our new chapter.
